Genmaicha Green Tea Cake Recipe:
- 1 cup of all-purpose flour
- 1/2 cup of granulated sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 2 tablespoons of Genmaicha green tea leaves
- 1/2 cup of unsalted butter, softened
- 2 large eggs
- 1/2 cup of milk
- 1 teaspoon of vanilla extract
- Whipped cream, for topping (optional)
Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan.
In a medium bowl, mix together the flour, sugar, baking powder, salt, and Genmaicha green tea leaves until well combined.
In a separate bowl, cream the butter until light and fluffy. Add the eggs, one at a time, and beat until well combined.
Gradually add the flour mixture to the butter mixture, alternating with the milk and vanilla extract, until well combined.
Pour the batter into the greased cake pan and smooth out the surface.
Bake the cake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serve the Genmaicha green tea cake with a dollop of whipped cream, if desired.
